El Capricho only buys anchovies from inshore vessels that use purse seine fishing, which reduces bycatch to a minimum. Also, one species of anchovy is used, the Engraulis Encrasicolus, most appreciated for its flavor. A 12-month maturation process guarantees a product that is uniform.
The bonito is from inshore boats that practice hook fishing, a way of fishing that is totally respectful of the rest of the species.
