El Capricho uses only fresh Thunnus Alalunga, caught during the summer in the month July, when the 'costera' takes place in the Cantabrian Sea. It is caught by inshore boats that use live bait and fishing hooks, an environmentally-friendly method, and improves the bonito's texture, making it more tender, since the fish does not experience stress.
The albacore contains Omega 3 fatty acids, making it very beneficial for a healthy diet.
