Bahia de la Concha is renowned worldwide for the quality of their semi-preserved white anchovies. Also known as "Boquerones", meaty anchovies are preserved in white wine vinegar, sunflower oil, garlic and parsley. Fished strictly in the cool waters of the Cantabrian Sea, the care taken in the curing of these fish is easily recognizable.
