Only the best yellowfin tunas are carefully selected to create this marvelous, solid piece of tuna. Once cooked, special cleaning is done by hand to remove skin remnants, fish bones, and any impurities. The fillets are finally packed by hand in an artisanal way, then olive oil is added.
